A "modern vintage" plate

In the 1950’s, Daniel Violet gave his passion and knowledge to the cuisine of "Les Lyonnais" and this spirit still remains from chef to chef.

Lyon traditional cuisine is perpetuated here, with a touch of modernity : the young generation of chefs gives some lightness to the sauces and dishes, without distorting the tradition.
"In the respect of tradition and the mixing of tastes, we want to give a more actual interpretation of the Lyonnaise cuisine by adding a modern twist to it : the cuisine becomes lighter, more accessible and full of flavors", says the chef of Aux Lyonnais.
Chef uses traditional recipes and reduction methods to bind and exalt the taste of each product. He selects its products from the best producers, and cooks old grandma meals with his personal touch.

He shares the same philosophy as Alain Ducasse and wants to honor the local products and specialties of the Lyonnaise cuisine by celebrating their taste. His cuisine is festive, convivial and traditional…a culinary travel in the heart of a land and a time.

On the menu, the pride of the house : Coddle egg, crayfish, Nantua sauce ; Lyonnaise chef pot - Suckling pig and duck foie gras ; "Marjolaine" chocolate and praline cake, light vanilla custard cream.
